* Depending on whether you like your oatmeal thick or creamy and a bit thinner. You could start with 1 cup of water and add more if necessary. You could also sub in milk (or your favorite milk substitute) too.
In a medium size pan, heat the oats, water, and salt over medium heat. Once the mixture begins to simmer, approximately 5-6 minutes, stir in the sliced banana.
Continue to stir until the banana breaks down and the mixture thickens*. Add vanilla, flax seed meal, stevia, and pumpkin spice, and stir until incorporated.
Pour into a serving bowl (or empty nut butter jar) and top with walnuts.
