In a medium size pan, heat the oats, water, and salt over medium heat. Once the mixture begins to simmer, approximately 5-6 minutes, stir in the sliced banana.
Continue to stir until the banana breaks down and the mixture thickens. Add the vanilla, pumpkin spice, flax seed meal, and stevia, and stir until incorporated.
Pour into a serving bowl and top with blueberry compote.
Combine all ingreadients in a small pot and bring to a boil while stirring. Once the mixture begins to boil, turn it off and give it a few more stirs. It should start to thicken quickly. Transfer from pot to serving container or to storage container.
Enjoy over oats, yogurt, and/or as syrup over pancakes if you thin it out a bit by adding more water or less arrowroot powder.
